Yummy, yummy in your tummy

So lets have a look at just how simple and yet nourishing a sandwich can really be.

# Let's start with The Kids #


Some really simple spreads to use are basically whatever they have in their school lunches. I have found in the past that most kids eat on the run anyway, so sitting them down to a Gourmet sandwich feast is pretty useless. Spread any of these generously on lightly buttered and sliced freshly baked bread or fresh crunchy bread rolls....

  • Good old jam spread...homemade or your kid's favorite (I love "Jammies")
  • Vegemite spread
  • Peanut Butter...Crunchy or Smooth
  • Shaved Chicken Loaf
  • Sliced Meat selection....Ham, Salami etc what do they like?
  • Nutella spread
  • Cheese, slices or shredded, goes well with Vegemite
  • Hundreds and Thousands (Sprinkles), the littlies love these.

  • # For the Kids who do like to try different things, then may I make a few suggestions ....


  • Mashed hard boiled egg and lettuce, you could also add some shredded or shaved cheese.
  • Cottage cheese with Dried fruit eg raisins/sultanas or apricots
  • Creamed cheese with sun dried tomatoes and a slice of selected meat/chicken

    # For The Grown-Ups--------Sandwich Fillings #


    The secret to the filling in my great Cold Sandwich Recipes is the creaminess. You can achieve this by using sour Cream, yogurt, mayonnaise, cottage cheese or even cream itself. Don't be frightened to experiment with different textures....

    My favourite has always been sour cream for no other reason than personal choice and the flavor doesn't seem to compromise with the other ingredients. Have a browse through these Cold Sandwich Recipes for ideas that you think your family and friends will enjoy.

    Egg Mayonnaise Sandwich Recipe


    Ingredients:

  • Slices of freshly baked bread....can use white, wholemeal or your favourite grain/Rye etc
  • Boiled Eggs
  • Mayonnaise (could use Sour Cream)
  • Chopped fresh Chives (Can use Spring Onions)
  • Seasoning...to personal taste
  • Fresh Lettuce leaves to serve
  • Depending on the number that you are serving I suggest 1 egg per person....I always try a little taste test as I make this up, try not to over season and keep as moist as possible without becoming sloppy.Chop the eggs.Add the Mayonnaise, the chopped chives and the seasoning....mix through thoroughly and store in an airtight container in the refrigerator or cooler, ready to serve at the picnic.At the picnic spread the sliced Bread with a little butter or margarine if you want to, a small lettuce leaf and add lavish amounts of the mix, another one of my favourite Cold Sandwich Recipes....Yummy!

    Suggested Tip

    Add cooked and shredded chicken, cooked bacon or even tuna chunks to the mixture for different fillings.

    Cheese & Onion Mix Sandwich Recipe


  • 2 Slices of your Favourite Bread
  • Cheddar Cheese
  • Onion
  • Chives
  • Mayonnaise
  • The quantities to use in this Cold Sandwich Recipes will depend on the number of people that you are serving.....Grate a pile of cheddar cheese into a mixing bowl or dish.Finely chop the onion and add to the mixing bowl. Add a large spoonful of mayonnaise into the mixing bowl making sure that the cheese and onion are well mixed, keep the mix from getting too sloppy though...add more cheese if you need to.Add a small amount of chopped chives into the mix and store, cool, ready to use at your picnic.

    Suggested TipChop up some sardines and add to mix or use tinned salmon chunks for a different flavour.

    Silverside & spinach


  • 120g (1/2 cup) spreadable cream cheese
  • 60g (1/4 cup) sun-dried tomatoes, chopped
  • 100g pkt lite silverside
  • baby spinach leaves
  • Combine cream cheese with the sun-dried tomatoes and add the spinach leaves and shredded silverside. Store in airtight container, cool, until ready to spread onto your favourite bread. I love to use a well grained bread with my Cold Sandwich Recipes, as the grained texture adds to the delicious experience.

    Suggested TipShredded cooked chicken, ham or other cold meat could be used as a substitute for the silverside.

    Honey ham


  • 65g (1/4 cup) cottage cheese
  • 2 tsp chopped fresh basil
  • 100g pkt roasted shaved honey ham or choose from the Deli'
  • avocado
  • fresh lemon juice
  • Mix cottage cheese with the chopped fresh basil. Store, cold, ready to use.At the Picnic mash the avocado with fresh lemon juice spread lavishly onto your favourite chosen bread slice, top with the shaved honey ham and 2nd lightly buttered bread slice.

    Suggested Tip

    Substitute the shaved ham with shaved chicken, shaved turkey or smoked salmon...Another one of my favourite Cold Sandwich Recipes Yum, Yum in your Tum.

    Cold Sandwich Recipes can be made using freshly baked bread rolls, baguettes or loaves (sliced or left whole).

    There are so many different types available from plain white to beautiful and delicious multigrains. Sour Dough breads, Rye breads, Soy and so on...experiment with the different textures and tastes.

    There are also great new selections of pocket/pitta breads to use with Nanna Mazza's Cold Salad Recipes and have a look at the different wraps that you can now get.

    The world is getting smaller and the blending of other cultures brings with it the wonderful opportunity of trying new tastes and new ways of presenting the good old sandwich as an example.....

    Gourmet Wrap-ups

  • "Lavish" (or Mountain) Bread, 1pkt (flat, thin wrap)
  • 200gm Shaved Tasty Cheese
  • 100gm of Shaved Leg Ham
  • 90gm mild Hungarian Salami
  • 100gm Turkey Breast
  • Coral Green Lettuce Leaves
  • Mayonnaise
  • Seasoning to taste
  • Spread the Mayonnaise onto the Bread and add the cold meats, seasoning and shredded lettuce as your spirit dictates...combine the meats or make up the slices separately. Cut up into pieces and serve with a selection of side salad dishes

    Cold Sandwich Recipes are very easy to put together, they are the most simplest way of enjoying the company of Your Family and Friends when out on a Picnic Getaway. The mess is minimal giving you more opportunity to sit and enjoy Yourself...you deserve it!
